The arrival of warm weather means the return of farmers markets to Minnesota communities.  In the last fifteen years, the number of Minnesota markets has tripled—currently there are over 160 of them. This cookbook and helpful guide features a listing of the farmers markets in the state as well as a map of their locations. The recipes are organized alphabetically by ingredient, along with tips for buying, cleaning, cooking and storing each item. Local chefs and farmers contributed more than 80 recipes ranging from the familiar (Eggplant Parmesan) to the exotic (Kohlrabi Coconut Soup). With appetizers, soups, salads, sides, main dishes, desserts, and more, the Minnesota Farmers Market Cookbook provides the information needed to take advantage of the best that Minnesota’s farmers markets have to offer.

About the author:

Tricia Cornell contributes to the food blog The Heavy Table and is the author of a number of books on local travel and food, including Eat More Vegetables: Making the Most of Your Seasonal Produce (Minnesota Historical Society Press, 2012). She has also written for Minnesota Monthly, City Pages, and Experience Life. Tricia lives, writes, cooks, and eats in Minneapolis with her husband and two children.
